why a hundred prongs
more prongs, finer foam. the cheap whisks run 50 to 80 and give you a thin, flat cup with bubbles that collapse in seconds. a hundred-prong chasen builds a dense, stable microfoam that carries the aroma and softens any edge in the tea.
how to use it
sift 4g into a bowl. add 80ml of water at 80°c — not boiling, boiling scorches the leaf. whisk briskly in a W motion for about 20 seconds, keeping the prongs just off the base of the bowl, until a fine foam lifts. don't stir in circles.
looking after it
- soak the prongs in warm water for a minute before the first use of the day — it softens them and stops breakage
- rinse with water only. no soap, no dishwasher.
- air dry prongs-up, ideally on a whisk stand, so it holds its shape
- natural bamboo, hand-carved from a single piece

how long does a whisk last?
with daily use and a stand, six to twelve months. bamboo is a consumable — prongs will eventually snap, and that's normal.
do i need the stand?
not on day one, but it roughly doubles the life of the whisk. it's included in the gift box.
can i use it in a mug?
you can, but a wide flat-bottomed bowl works far better — there's room for the W motion. a cereal bowl will do.
