grainy usually means the powder hasn’t been sifted before whisking. ceremonial matcha compacts in the tin and clumps on contact with water, so 4g through a small sieve first, then 80ml of water at 80°C (not boiling, boiling scorches it and turns it bitter). that alone fixes texture in most cases.
but if you’ve already been doing that, email us with your order number and we’ll replace the tin from our current harvest!
